KALIH by SIKI: Bali’s New Cocktail Lab in Nusa Dua

Nusa Dua is not typically where you go looking for underground cocktail culture. But that’s exactly why KALIH by SIKI feels interesting.

Opened in May this year, inside SIKI, one of the area’s most design-forward dining destinations, KALIH introduces something different to the southern enclave: a cocktail lab in Bali built around conversation, experimentation and a deeper exploration of arak.

A New Cocktail Experience in Nusa Dua

Tucked within SIKI’s ITDC address, KALIH is not a traditional cocktail bar in Nusa Dua. There is no printed drinks list, no predictable classics and no standard signature menu.

Instead, the 16-seat space functions as a research and development room, an intimate bar setting where spirits are studied, infused and reinterpreted. It feels more like a creative space than a traditional bar, designed for guests who are curious about what’s in their glass rather than simply ordering from a menu.

For those already familiar with Nusa Dua dining destinations, KALIH adds a new dimension to the area’s after-dark offering, shifting the focus from large-scale resort bars to something more personal and considered.

Bespoke Cocktails Inspired by Conversation

At the heart of KALIH is what the team calls The Cocktail Lab Experience. Each drink begins not with a menu, but with a question.

Guests are asked about their mood, flavour preferences and spirit of choice. From there, mixologists create bespoke cocktails in real time using house-made infusions, experimental distillations and ingredients developed in the bar’s R&D space.

It’s a custom cocktails Bali experience designed around dialogue. One guest might be served a bright, citrus-led creation layered with subtle spice, while another receives something darker and spirit-forward built around aged arak or Japanese influences. No two drinks are identical, and that unpredictability is part of the appeal.

Exploring Local Spirits Through Experimental Mixology

KALIH’s first research focus is arak, Bali’s traditional distilled spirit. While arak has long been part of local culture, it has rarely been elevated within contemporary cocktail spaces in a refined way.

Here, arak is treated as a starting point for experimentation. Through infusion, distillation and flavour development, the team explores new expressions of the spirit while remaining respectful of its origins. Traditional processes, from palm sap fermentation into tuak and eventual distillation, are studied alongside modern techniques.

The result is a mixology experience in Bali that feels both intellectual and grounded. It’s not about novelty for the sake of it, but about reframing a culturally significant ingredient within a more contemporary context.

Inside the Cocktail Lab Experience

The physical space reflects the concept. With only 16 seats, KALIH is intentionally intimate. The bar counter becomes the focal point, allowing guests to watch infusions being prepared and custom cocktails assembled step by step.

Alongside evening service, KALIH also introduces an Arak Workshop running Wednesday to Sunday in the early evening. The session explores the history and production of arak before guiding guests through tastings and a hands-on cocktail creation of their own.

It’s a rare opportunity to engage with one of Indonesia’s most culturally important spirits in a setting that blends education with experience.

An Intimate Alternative to Bali’s Usual Nightlife

In a region better known for beach clubs and large-scale resort lounges, KALIH offers something quieter. It’s a deliberate alternative to Bali’s louder nightlife scene, appealing to travellers who prefer conversation over crowds.

As Bali’s cocktail culture continues to evolve, from clifftop bars to hidden speakeasys and cocktail bars in Bali, spaces like KALIH signal a shift toward smaller, more concept-driven venues.
