Case Study #010: Clove- Master Class
As part of Katamama’s Cultural Programme, Akademi hosts a continual series of master classes, offering guests the chance to learn the secrets behind our mixologists’ expertly crafted cocktails. Every month, the Akademi bar team explores one of Indonesia's local ingredients. This month’s master class will showcase Case Study #010: Cloves.
Cloves are the aromatic flower buds of a tree native to the Maluku islands in East Indonesia. The original people of Maluku would plant a clove tree every time a child was born.They believed that the child’s life was tied to the tree and while the tree stayed healthy, so would the child. Today, cloves are still highly regarded, but for their vast culinary and medicinal uses. A warm spice, cloves are a great natural remedy for relieving respiratory inflammations, easing toothache and improving digestion, among other things.
Taking the lead in this Case Study is Akademi resident mixologist, Agus Bayu Pariyana, known as Crist JR. Cristian has always loved mixing flavours, at first in the kitchen and more recently, behind the bar. Over the last seven years, Crist has been mastering his mixology skills alongside a roster of local and international bartenders, as a cocktail judge, and as the Chairman of the Indonesian Bartenders’ Association for Tababan regency.
