Case Study #007: Kaffir Lime – Master Class

Every month, the Akademi bar team explores one of Indonesia's local ingredients. This month’s master class will showcase Case Study #007: Kaffir Lime.
Native to tropical Asia, the Kaffir lime is smaller and more intense in aroma than a regular lime. The plant is thorny with hourglass-shaped leaves, and the pulpy fruit produces extremely tart juice. Kaffir lime features extensively in Asian cooking, but the ingredient also carries spiritual and medicinal values, with some cultures even believing that they avert evil spirits.
As well as aiding digestion and boosting the immune system, kaffir limes help to detoxify the blood and slow down male pattern baldness and hair loss.
Taking the lead in this case study is I Made Willy Widiantara, known as Willy. Having started his career three years ago as a barback, Willy went on to gain bartending experience in the Kuta area before landing at Katamama, where he is now happily engaged mixing drinks behind the Akademi bar.
Willy’s true passion for mixology is in telling the story behind the drinks he creates. He believes that through this, he can really connect with and inspire his guests. After a busy shift, Willy likes to relax with one of his favourite drinks, a heady, whisky-based cocktail.
30ml Bulleit Bourbon
10ml Homemade Ginger Liqueur
10ml Kaffir Lime Arak
40ml Tangerine Juice
15ml Tri-citrus Juice
15ml Simple Syrup
1 dash of Magrood Bitters
1 Kaffir Lime Leaf
Topped Kaffir Lime Foam
Garnish: Kaffir Lime Leaf and Kaffir Lime Slice
