Every month, the Akademi bar team explores and examines one of Indonesia's local ingredients. This month’s master class will showcase Case Study #006: Rosella.
A species of Hibiscus plant native to West Africa, rosella now grows successfully in many tropical regions, including Indonesia. The plant is striking with beautiful red flowers, and it can also be used for many medicinal purposes, including as a digestive aid, an antibacterial, and to treat hypertension.
Resident mixologist Wayan Dodi Pradita will be presenting his Flores Akademia, a gin-based cocktail inspired by, and featuring, various components of the rosella plant.
Wayan began his career as a bar back at Potato Head Beach Club some years ago and he’s never looked back. His attention to detail, love of entertaining guests, and passion for crafting beautiful cocktails make him one of the most talented young mixologists working in Bali at the moment. His favourite cocktail to drink of a tropical Bali evening is a Margarita on the rocks.
30 ml rosella gin
30 ml salak amaretto
25 ml rosella syrup
15 ml citrus juice
2 dashes of rare bitters
Served long & garnished with dehydrated lemon and rosella candy
IDR 100.000 net per person for one cocktail
