There is a growing enthusiasm for Nikkei cuisine amongst foodies. The word Nikkei itself literally means “Japanese outside of Japan.” It dates back to when Japanese migrants moved to Peru for political reason in the 1930s, some who stayed in the country got homesick of the food back in Japan, and started creating Japanese dishes using local resources. To put it simply, Nikkei cuisine is the beautiful love child of Japanese and Peruvian ingredients and techniques.
Over the years, with refined elements from both cultures, Nikkei cuisine has blossomed into something else entirely; it is not necessarily Japanese cuisine with Peruvian influence or vice versa.
